What started as a bold idea in 2020, mid-pandemic, quickly became a passion-fueled grind.
Brothers Andrew and Nicholas Rentería launched Chubasco Tacos with a mission to bring authentic Sonoran street flavors to Phoenix — scaling up through every format possible: a pop-up tent, a kiosk, a food truck, and finally a full service all night taco trailer.
In time, the brothers paused Chubasco to branch into something bigger: an elevated hospitality concept built with Audrey Corley of Boycott Bar. Together, they created Dahlia Tapas Tequila & Wine — an award-nominated Spanish-Mexican fusion restaurant and the flagship for their growing hospitality brand, Behind!
Today, Chubasco Tacos returns as a dedicated catering experience & collaboration pop-up, specializing in Sonoran-style tacos, signature hot dogs, and live taquero setups for weddings, private events, and corporate celebrations across Phoenix.
For the Rentería brothers, food has always been more than a meal — it’s about crafting moments where bold flavors, big energy, and community collide.
